Elea Devex Industrial Pulsed Electric Field assisted freeze-drying trials

In 2019 Elea brought their PEF Pilot system into Devex to trial Pulsed Electric Field assisted freeze-drying on strawberries.

The trial helped to prove the viability of PEF enhanced freeze-drying at an industrial scale. PEF induces electroporation which opens cell membranes, enhancing production, improving quality, producing better taste, colour and aroma and shape stability. The Elea PEF Advantage system range is suitable for all types of PEF assisted drying and applicable to a wide range of products.
