Bluegrass Ingredients is positioning its citrus juice powders as a shelf-stable formulation solution for manufacturers seeking authentic citrus flavour, processing stability and application flexibility across snacks, bakery and dressings.

Bluegrass Ingredients has expanded its citrus powder portfolio, positioning the ingredients as a formulation solution for manufacturers seeking authentic fruit flavour alongside improved storage stability and processing flexibility.

The company said demand for citrus profiles such as lemon, lime, orange and pineapple continues to grow across categories including snacks, baked goods, dressings and desserts, with manufacturers looking for ingredients capable of delivering consistent flavour across applications.

According to Bluegrass Ingredients, the citrus juice powders are designed to replicate the flavour characteristics associated with fresh fruit while offering greater stability than liquid juice formats. The company said the powders can help reduce waste linked to ingredient perishability while lowering storage and transportation demands through their dry format.

The powders are intended for use across a broad range of formulations, including bakery products, snack seasonings, desserts, sauces and beverage applications, allowing developers to work from a single citrus ingredient platform across multiple product categories. Bluegrass Ingredients added that the dry format can simplify ingredient handling within manufacturing environments while supporting faster integration into existing production systems.

Manufacturers are increasingly looking for citrus ingredients that combine authentic fruit flavour with greater process stability, handling efficiency and application versatility.”

Shelf life and processing stability in focus

Bluegrass Ingredients said the powders are designed to support batch-to-batch flavour consistency while contributing to mouthfeel and overall flavour impact in finished products. The company added that the ingredients are available in both traditional and organic formats, with all variants suitable for vegan and gluten-free formulations and certified Kosher.

The supplier said the portfolio is intended to help manufacturers address a range of product positioning strategies, including premium, better-for-you and specialty food launches, without requiring multiple ingredient systems across development programmes.

To support formulation requirements, the company offers customised citrus powder systems with pH adjustment capabilities, enabling manufacturers to modify acidity, flavour intensity and brightness for specific applications. Bluegrass Ingredients said this approach allows formulators to tailor citrus performance depending on the target flavour profile, processing conditions and finished product format.

Bluegrass Ingredients added that its spray drying and blending technologies are intended to preserve citrus flavour and aroma during production and maintain ingredient performance through processing steps such as mixing and heating. The company said its application and culinary teams also work with manufacturers on concept development and commercialisation through its Agile Ingredient Innovation model and Agile Kitchen platform.
